
The TRIO FDS 105 DM2 is designed for salmon processing, combining defattening with standard and deep skinning. It features an extra-wide freezing drum to accommodate both standard FDS skinning and DM defattening simultaneously.
The machine operates using an indirect cooling system where a sealed refrigeration unit cools a secondary medium, which then cools the drum surface below freezing. This system is low-maintenance and user-friendly.
Fillets are placed skin side up on a conveyor belt. As they pass under the cold drum, the skin freezes to the drum surface. A rotating band knife then separates the fillet from the skin, which is scraped off the drum. The skinning depth is adjustable between 1 - 12 mm.
The process minimizes strain on the fish meat and skin, and uses minimal water, reducing bacterial growth and enhancing fillet quality. The machine allows deeper skinning along the fillet's center fat line and shallower on the sides.
