Tetra Therm®Lacta PMO Dairy pasteurization unit Application Tetra Therm Lacta PMO is a dairy pasteurization unit designed for continuous processing and pasteurization of Grade “A” milk, cheese milk, yoghurt milk, cream, ice-cream mix and other low acid liquid dairy products, according to the standards of the U.S. Pasteurized Milk Ordinance (PMO) and the 3A Sanitary Standards. Working principle Tetra Therm Lacta PMO is automated to safeguard production. Production is strictly controlled by production recipes with processing parameters and a separate public health PLC. Main process sequences can be divided into the following main steps • Production - Pre-sterilization - Filling - Processing / circulation - Emptying • Cleaning-In-Place • Inspection Before production can commence it is necessary to sterilize the unit by circulating hot water for 20 minutes. After pre-sterilization, the unit is cooled down and stabilized to production temperatures. If there is a time gap between pre-sterilization and production, the unit could be set in hibernation mode. This is an energy conservation mode in which the energy consumption is decreased up to 85% compared to the hot water circulation mode - by reducing the power, steam and water consumption. When downstream equipment is ready, production can start. Production starts by filling the unit with product from the balance tank. The product displaces the water/product mix to drain, white water tank or reject tank. The balance tank includes level control and a CIP device, which safeguards the gentle treatment of the product and ensures a high degree of cleanability.

Critical control points are monitored by the public health PLC during all production steps. Before being homogenized in a Tetra Alex homogenizer (option), the product is regeneratively pre-heated in a Tetra Plex plate heat exchanger (PHE) by the outgoing pasteurized product. Other matching optional sub-units include functions like deaeration, separation and fat-standardization. To ensure even heating of the product, final heating takes place in the PHE by means of an indirect hot water circuit.
