Product catalog summary
Application
The document describes the continuous preparation of ice cream mix with capacities ranging from 1,200 l/h to 14,000 l/h. The unit handles the entire preparation process, including high shear mixing, high pressure homogenization, HTST pasteurization, and delivery to aging tanks. It is suitable for high viscous ice cream products, those containing pulps, fruit pieces, flavors, fragrances, sorbets, and water ice.

Highlights
- Fully automated continuous production
- Powerful mixing with Tetra Pak® High Shear Mixer
- Production traceability and product safety system
- Hygienic design and sustainability focus
- Variable options including integrated CIP unit and external cooler
- Option for a third mixing tank for flexibility

Working Principle
Ingredients are mixed in a Tetra Pak® High Shear Mixer, which can be open or vacuum type. The mix is recirculated to ensure complete hydration. The Tetra Pak® Plate Heat Exchanger is used for heating and cooling, minimizing energy consumption. The unit is compact and divided into three parts: mixing tanks and mixer, unified frame with pasteurizer and HMI, and homogenizer.

Standard Material
The unit includes stainless steel mixing tanks with agitators, sample valves, level sensors, and CIP spray balls. The main frame contains a double strainer, balance tank, plate heat exchanger, pumps, hygienic valves, and an HMI panel. The homogenizer features automatic pressure release and remote pressure settings.

Automation Functions
- Automated PLC operated sequences for sterilization, mixing, pasteurization, circulation, emptying, cleaning, and CIP
- Automated pasteurization temperature control
- Automated flow diversion controlled by temperature sensors
- Differential pressure supervision

Optional Equipment
- Water recovery
- CIP dosing unit
- Rework/fat/sugar/fresh milk dosing inlets
- Extended holding time
- Control of CIP detergents with conductivity
- Connection to automatic powder handling units
- Control system Rockwell
- Product integrator with recipe management and parameter control

Technical Data
Capacities range from 1,200 l/h to 12,000 l/h. Dimensions vary by model, with recommended free space around the unit. The choice of mixer affects unit size.

Service Media Conditions
- Process water: 18-28°C
- Steam: 3 bar, saturated
- Compressed air: 6.0-6.5 bar
- Ice water: 3 bar, max 2°C
- Seal water: 3 bar, max 25°C, 10 l/h

Environment
The modular design allows for easy adaptation. Energy consumption is optimized through regenerative sections and efficient components. Options for further optimization include water recovery and automation functions.

Ice Cream Mix unit A3-2

WORKING PRINCIPLE OPTIONAL EQUIPMENT Ingredient mixing takes place in a Tetra Pak® High Shear Mixer, which can be either an open mixer or a vacuum mixer. Liquid and powder ingredients can be connected directly to the vacuum mixer, minimizing operator resources, and optimizing production flow. The mix is recirculated over the mixing tanks to ensure complete hydration of the ingredients. The Tetra Pak® Plate Heat Exchanger facilitates heating and cooling of the mix before homogenization, at pasteurization and at final cooling in a regeneration system that minimizes energy consumption. The unit...
