Optimizing the washing process The Client: La Antigua is a cheese factory created in 2002, which belongs to the company Gestión Agro Ganadera S.L., founded in 1994 and specializing in the production of sheep's milk. Located in Fuentesaúco in Zamora, it has become a market leader in sheep's milk cheese, exporting around 500 tons of cheese nationally and internationally. They make cheese in an artisanal way and have Zamorana certification, from Churra and Castilian sheep. Water savings Detergent savings The Problem: The aim was to sanitize the utensils, tools and objects. Previously, the cheeses were made on wooden boards, but due to the need to take greater care with food safety, La Antigua changed this process to plastic baskets. These baskets and trolleys were washed in tunnel washers, which wasted a lot of time and water, consuming up to 5,000 liters of water a day. This solution was not viable in either economic or sustainable terms and due to its ecological and sustainable concerns, La Antigua was looking for more efficient washing equipment for these points. The advantages of the Multiwasher were many due to the reduction in water consumption and water recycling, as well as the use of steam. High-temperature cleaning provides a quality control standard for sanitization that reduces the risk of bacteria growth and improves food safety.
