IMMERSED LEVELS COOKER CC The immersed levels cooker is realized for the cooking of short-cut and filled pasta sheet. The pasta is immersed in the water and cooked through one or more levels of conveyor belts that run in parallel to each other. The dimensions are reduced in comparison to the traditional one-level cooker. The product moves immersed in water close to the boiling point. An accurate temperature control allows a uniform pre-cooking. MAIN TECHNICAL FEATURES: • Structure entirely made of stainless steel. The tank is thermally insulated through mineral wool between two stainless steel sheets. • Fully wash-down with high pressure water and detergent. • Heating of the cooking water through external heat exchanger, type water/steam. It has a thermoadjustment system controlled by the PLC logic to keep a constant temperature inside the tank in automatic mode. • Conveyor belt made of disjoint metallic net with side chains driven by rollers. The belt is entirely realized in stainless steel and it is provided with an independent gearbox driven by VSD to modify the speed and the cooking time in water according to the recipe. • Mechanical lifting system of the lid to facilitate the access to the inner parts of the tank and the deep cleaning of the belt surface.
