Skinning technologies and skinning methods The CF technology The freeze drum technology When processing with the freeze drum technology, the skin of the fillet is sprayed with water and then freezes onto the freeze drum. A rotating band blade separates the skin from the fillet. A scraper removes the skin from the freeze drum.
