This report explores the limitations of traditional vacuum packaging and the advantages of MAP. It highlights the importance of accurate nitrogen gas permeability testing in MAP materials. Vacuum packaging, while reducing oxygen exposure, presents drawbacks. The nearvacuum environment causes package adhesion and product damage. The pressure differential facilitates unwanted gas ingress, requiring expensive high-barrier materials. Additionally, vacuum packaging is unsuitable for some fresh produce due to anaerobic bacteria growth. MAP replaces air with inert gases like nitrogen, offering several benefits. Reduced oxygen levels inhibit microbial growth and spoilage. Nitrogen maintains positive pressure, preventing product deformation and preserving package integrity. Two crucial tests are necessary for successful MAP implementation:   Material Barrier Property: This test evaluates the material's ability to retain nitrogen within the package, preventing quality issues from arising due to nitrogen loss. Nitrogen Gas Purity: Food-grade nitrogen with minimal impurities is essential for food safety. National standards typically specify allowable impurity levels.
