This study investigated how well the packaging material itself affects nitrogen-filled packaging. In the study, the researchers tested the gas composition inside nitrogen-filled cake packaging after storage and measured the oxygen and nitrogen permeability of the packaging material. Labthink C650H headspace gas analyzer is used to analyze the gas composition in the sample package, and VAC-V2 manometric gas permeability tester to test the gas permeability of the packaging material. It was found that a significant amount of oxygen entered the package over time, reducing the nitrogen content. This result suggests that the packaging material had high gas permeability, allowing oxygen in and defeating the purpose of nitrogen filling. In conclusion, for nitrogen-filled packaging to be effective, the packaging material needs to have high barrier properties to prevent gas exchange. 1
