Macerators

Product catalog summary
Overview of Macerators: The carve macerator is designed to make deep cuts in meat on opposite sides in parallel directions. This process significantly increases the absorption surface for brine and additives, enhancing the extraction of meat proteins.
Benefits: The treatment with the carve macerator results in superior stability of the brine, fat, and meat complex, reducing liquid transfer in packaging, increasing product yield, and ensuring greater uniformity. It also reduces tumbling times and allows for the absorption of large quantities of added brine.
Design and Functionality: Constructed entirely from stainless steel, the machine can be easily integrated into production lines due to its three-directional unloading capability. It can exclude products that do not require processing, and the loading height is adjustable. The machine self-adjusts to product dimensions, and the cut pressure is adjustable to meet various technological needs.
Maintenance: The blade rolls are easy to remove, and one can be replaced with a special roll to preserve the rind.
