La CBC HP trocea el bloque congelado a través de la acción de rotación de un rodillo equipado con 4 cuchillas. Se obtienen trozos de producto de formas y medidas irregulares de entre 5 y 10 mm de grosor dependiendo del tipo y temperatura de la carne. La descarga del producto cortado se realiza directamente sobre carros estándar de 200 litros. Máquinas diseñadas y fabricadas siguiendo todas las normas marcadas por la CE sobre higiene y seguridad.
