WINEMAKING CONTROL AND MONITORING FOR WINERY WASTE WATER DISCHARGE The wine production generates polluting effluents for the natural environment, impacting particularly the quality of watercourses. These effluents come from : • components of grapes, must or wine • descaling and cleaning products • products involved in the vinification Wine-making and distillation cellars, regardless of their size, are subject to regulations requiring them to recover and treat effluents before discharge to the natural environment.
