Application and Operation
This document describes a curd draining roller designed to facilitate the removal of whey from curd produced in coagulation vats. The system connects to cheese vat discharges via specialized piping. The curd mixed with whey is placed on a perforated draining roller, which separates excess whey from the solid curd. The whey is then transported to a collection vat using a centrifugal pump and tubing, and subsequently stored in a designated tank. The separated curd is directed based on the ripening process used: either onto draining trolleys for lactic ripening or into an automatic draining group for citric or mixed ripening.

Questo gruppo e stato realizzato per agevolare lo spurgo del siero dalla cagliata proveniente dalle vasche di coagulazione. Collegato mediante opportune tubazioni allo scarico delle polivalenti, la cagliata mista al siero viene depositata sul rullo drenante che grazie ad una superficie forata, permette di separare il siero in eccesso dalla matrice solida (cagliata). Il siero viene convogliato tramite l'ausilio di una pompa centrifuga e di una tubazione, in una vasca di raccolta per essere inviato ed infine stoccato nell'apposito serbatoio.
